Polish: “Słowoku” at https://www.kurnik.pl/slowoku/ - really challenging, mainly because there are 35 letters to choose from (no counting e/ę, l/ł or z/ź/ż, etc as the same letter here), which makes it harder to cut down the number of letters to choose from, and partly because a significant number of Polish words have no vowels, unless you count “y” as a vowel, which I think they do (e.g. the first one I managed to solve, many days ago so this isn’t a spoiler, was WPŁYŃ, which means influence)
